This blueberry coffee cake is your morning’s best friend: sweet, soft, and irresistibly crumbly.
Ingredients
- For the Crumb Topping
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 cup unsalted butter, cold and cubed
- For the Cake
2 cups all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream
1/2 cup milk
2 cups fresh or frozen blueberries (if using frozen, do not thaw)
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Grease a 9-inch square baking pan with non-stick spray.
- Make the crumb topping. In a bowl, combine sugar, flour, and cinnamon. Cut in the cold butter with a pastry blender, two forks, or your fingers, until the mixture resembles coarse crumbs. Set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a separate large bowl, beat together softened butter and sugar with an electric mixer until light and fluffy, about 3-5 minutes. Beat in the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Add the flour mixture in three parts, alternating with the sour cream and milk. Begin and end with the flour mixture. Mix until just combined. Gently fold in the blueberries.
- Spread the batter into the prepared baking pan. Sprinkle the crumb topping evenly over the batter.
- Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean or with a few crumbs.
- Remove the cake from the oven and let it cool in the pan on a wire rack for about 10-15 minutes. Then, transfer it from the pan to the rack to cool completely or serve it warm.
