Mexican food is one of my all-time favorite cuisines, but it can be a bit time-consuming to make. That's why I love this layered burrito casserole recipe – it's easy to put together and just as delicious as any traditional burrito. Plus, it's perfect for feeding a crowd!

  • onion,red or green bell pepper
  • taco seasoning
  • black beans
  • Rotel or diced tomatoes with green chilies
  • cream of chicken soup
  • sour cream
  • large flour tortillas
  • Mexican blend shredded cheese

  1. Preheat the oven to 350 degrees. Spray 9x13 caasserole dish with nonstick cooking spray, set aside.
  2. In a large large skillet, brown beef with the diced onion and bell pepper until there is no pink left in the beef. Drain, if desired.
  3. Add the can drained black beans, water and taco seasoning packets. Cook for about 5 minutes until everything is well blended and heated through.
  4. In a separate bowl, whisk together the sauce ingredients - mix soup, Rotel and sour cream together.
  5. Spoon about ¼ cup sauce mix onto the bottom of the pan. Slice the tortillas in half. Place a layer of tortillas over the sauce to cover the bottom of the baking dish.
  6. Spoon half the meat bean mixture on top of the tortillas, top with half the sauce, sprinkle cheese over the top.
  7. Repeat layers, finish with a layer of cheese on top.
  8. Cover with foil, bake in pre heated oven for 30 minutes or until hot and bubbly. Top with diced tomatoes, minced cilantro and serve with a dollop of sour cream or salsa - yum!

Things to know

  • I recommend that you spray the bottom of a casserole dish well with nonstick cooking spray before you start to layer this casserole. This will help make cleaning up a breeze.
  • Brown the beef until it is no longer pink and the peppers and onions are tender.
  • Be sure to drain the ground beef, pepper, and onions well so that your casserole isn't greasy.
  • Do not drain the Rotel, use it just like it comes out of the can.
  • Sliced green onions or black olives make a tasty garnish for this beef burrito casserole.

Variations

  • Instead of refried beans, you can use a can of drained black beans.
  • Corn tortillas will also work in this hearty meal if you are not a fan of flour.
  • Cream of mushroom soup can be used in place of cream of chicken soup in a pinch.
  • I like to top my cheesy burrito casserole with a hot sauce and sour cream mixture for a tangy sauce.
  • You can use your favorite cheese for this recipe, I like sharp cheddar cheese, but Mexican blend or even pepper jack would taste delicious.
  • Not a fan of ground beef? Use diced chicken breasts instead for this baked burrito casserole.
  • If you like your Mexican food spicer add an extra can of green chilies to the beef mixture for extra spice.
  • Build your layered burrito pie in a pie plate! Serve it cut into quarters. There should be enough for at least two pies. Enjoy!

Storage

Refrigerate - Cover with plastic wrap or store leftovers in an airtight container in the fridge for up to 3 days.

Freezer - Layer everything in a freezer-safe dish and store in the freezer for up to 2 months. When you're ready to eat, thaw the frozen burrito casserole overnight in the fridge and then bake according to the recipe instructions.

Reheat - Preheat the oven to 350 degrees F. Cover and bake until heated through, about 20-30 minutes.

Ingredients

  • 1 ½ pound lean ground beef
  • ½ cup onion chopped
  • ½ cup red or green bell pepper chopped
  • 2 packets taco seasoning
  • ½ cup water
  • 16 ounces black beans
  • 10 ounces can rotel diced tomatoes with green chilies
  • 10.5 ounces can cream of chicken soup
  • ½ cup sour cream
  • 6 8" flour tortillas cut into strips
  • 3 cups Mexican blend shredded cheese divided

Instructions

  • Preheat the oven to 350 degrees. Spray 9x13 caasserole dish with nonstick cooking spray, set aside.

  • Dice the onion and bell pepper.

  • In a large large skillet, brown ground beef with the diced onion and bell pepper until there is no pink left in the beef. Drain, if desired.

  • Whisk together the sauce ingredients - Rotel, sour cream and cream of chicken soup.

  • Repeat layers, finishing with a layer of tortillas. Sprinkle remaining cheese on top.

  • Cover with foil, bake in pre heated oven for 30 minutes or until hot and bubbly. Top with diced tomatoes, minced cilantro, sour cream or salsa.

    This could be a "me thing" since I haven't slept....but it says to layer tortillas "as directed". I keep looking but I don't see where that direction is given. I apologize in advance if I'm looking directly at it but not seeing it

      Hey Anne - You'll lay 1/4 cup sauce on the bottom of the casserole dish, then the tortillas. Continue layering the ingredients. Enjoy the casserole.

        I increased the prep time to 20 minutes, good suggestion Stephanie, but not because of the chopping because seriously... it's only an onion and bell pepper. But you're right by the time you brown the ground beef and make the sauces, it will take a little longer. Thank you!
