  • Make the simple syrup: In a small saucepan, combine sugar, water and lavender. Stir and bring to a boil over high heat. Reduce heat and simmer until the sugar is dissolved.

  • Use a fine mesh sieve to strain the syrup. Discard lavender buds.

  • 1 cup sugar
  • 1 ½ cups water
  • 3 tablespoon lavender buds 6 sprigs
  • 2 cups fresh lemon juice 6-10 lemons, depending on size
  • 6 cups cold water
