You’ll love how simple this Chicken Cordon Bleu recipe is! I got this idea to make unbreaded chicken cordon bleu from a Taste of Home cookbook I borrowed from the library a while back. I have been on kind of a Taste of Home cookbook binge lately so a lot of my most recent recipe inspiration has been coming from their cookbooks and magazines. I just love how simple and delicious their recipes are, and so does my family.

When I find a recipe I am intrigued by I start looking for ways to lower the SmartPoints per serving so I can share it with our MPM readers. This one didn’t need much help really. The cookbook I borrowed this concept from suggested making this with green beans and mushrooms so I went with that, but if you are not into green beans and mushrooms you could skip that part and still have a great main entree.

This recipe makes 4 servings and is just 4 WW FreeStyle SmartPoints per serving*.

1 lb. boneless, skinless chicken breast (4-4 oz. breasts)
1 Tbsp. canola oil
1 pkg. (12 oz.) frozen cut green beans
1 cup fresh mushrooms chopped or sliced
4 oz. deli ham (this was 8 thin slices for the kind I got)
4mozzarella cheese slices
Salt and pepper

Here is what you do:

Sprinkle chicken with salt and pepper.

Heat oil in a large skillet and add chicken. Allow to cook for 5-7 minutes. Flip and cook other side for another 5-7 minutes.

Little tip at no extra charge: If your chicken is really thick, (like mine was) if may be hard to get the middle cooked all the way through. If this is the case, you maywant to slice it down the middle or pound it down with a tenderizer before adding it to the pan, or you can do what I did… You can wait until your chicken isalready cooking, and then, in an attempt to get the pieces of chicken cooking faster, you can cover the pan and it will cook the chicken through quicker than if it was not covered. (You’re welcome)

Chop or slice mushrooms as the chicken is cooking.

Once the chicken is cooked all the way through, transfer it to a plate. You may want to slice into the thickest part of your chicken to make sure that the chicken is cooked all the way through before transferring the chicken.

Add the green beans and mushrooms to the pan. Sprinkle with salt and pepper. Cook 5-6 minutes. Transfer the bean and mushroom mixture to another bowl.

Add chicken back to the pan and allow to heat up a little. Flip each piece of chicken over and top with one ounce of sliced ham (this was two slices for each piece of chicken for me) and then top each with one slice of cheese. Cook covered about 2-4 minutes, or until cheese is melted.

Serve one Chicken Cordon Bleu with 3/4 cup of the bean and mushroom mixture.
