WHAT IS BOURBON CHICKEN?

Bourbon chicken is a flavorful chicken dish that is named after Bourbon Street in New Orleans.

It is a Cajun dish that has evolved a lot over the years and is now seen on many Chinese buffets!

I remember the first time I tried bourbon chicken was at a Golden Corral buffet and I was actually impressed by the flavor combination.

The sauce that the chicken swims in is sweet and savory. Originally the dish was made with actual bourbon, but many current variations leave out the alcohol.

WHAT TO SERVE WITH BOURBON CHICKEN?

If you aren't sure what to serve with bourbon chicken you are in luck because there are several great options.

This is a saucy chicken dish and it goes great with steamed veggies like broccoli.

It is also delicious with mashed potatoes or other starches like rice.

This is a higher-calorie option and if you are trying to lose weight you may want to pick steamed broccoli for a low-calorie side.

Another idea is to grab a bag of frozen stir-fry veggies and cook those up as a side dish.

INGREDIENTS FOR WW BOURBON CHICKEN

This recipe uses many of the common ingredients for bourbon chicken, but some substitutions are made to make this more Weight Watchers-friendly.

HOW TO MAKE WEIGHT WATCHERS CROCKPOT BOURBON CHICKEN

I love crockpot cooking and this smells so good by the time it is done. This is perfect for Sunday lunch because it can cook for 3 hours during the morning! I also love any excuse to use my pretty Pioneer Woman crockpot!

STEP ONE: ADD CHICKEN

Start off by lightly spraying the crockpot with nonstick cooking spray.

Add the diced chicken breast chunks to the crockpot.

STEP TWO: MAKE SAUCE

In a small bowl, add the apple juice, soy sauce, apple cider vinegar, swerve brown sugar replacement, sugar-free ketchup, water, minced garlic, red chili flakes, ground ginger, and salt and pepper to taste.

Stir these ingredients so they are well combined and then pour the sauce all over the chicken in the crockpot.

STEP THREE: SLOW COOK

Place the lid on the crockpot and slow cook on HIGH heat for 3 hours.

If you like a thicker sauce you can make a cornstarch slurry by adding 2 teaspoons of cornstarch and 1 tablespoon of water to a small bowl and whisking them together.

Add the cornstarch slurry to the crockpot after the 3 hours of cooking and cook for another 30 minutes.

This will help thicken the sauce. If you prefer a thinner sauce then skip the slurry step.

WEIGHT WATCHERS POINTS

Weight Watchers Bourbon Chicken points are based on dividing this recipe into 4 equal portions.

There is 1 point per serving for the blue and purple plans. There are 7 points for the green plan.

Please note that these points calculations are based on using and eating all the sauce and that probably won't happen. In reality, the points could potentially be lower if you don't consume very much sauce.

If you decide to change any ingredients remember that it could affect the points for the recipe.

On the current WeightWatchers Program (2023) it is 1 point per serving.

Ingredients

  • 2lb.Boneless Skinless Chicken Breastscut into bite sized chunks

Cornstarch Slurry, optional

  • 2 teaspoonsCornstarch mixed
  • 1tablespoonwater

Bourbon Sauce

Instructions

  1. Spray the crockpot insert lightly with nonstick cooking spray.

  2. Add the chicken breasts chunks into the crockpot

  3. In a small bowl, combine all the ingredients of the “Bourbon Sauce”and mix well. Pour sauce over the chicken in the crockpot.

  4. Cover the crockpot and cook on high heat for 3 hours.

  5. If you want to thicken the sauce make a cornstarch slurry by combining the cornstarch and one tablespoon of water and whisk them together.

  6. Add the cornstarch slurry if you want to thicken the sauce and cook for another 30 minutes on high. If you do not want to thicken the sauce then skip the slurry steps.

  7. Serve immediately with steamed vegetables, mashed potatoes or rice.
