Breakfast Casseroles are Perfect for a Crowd

And that’s exactly what I had before me this morning as I whipped up this casserole. Once a month I take breakfast to a group of senior citizens as an inner-city apartment complex. We play bingo and have a great time.

Every month I try to think of new and interesting things to take. I’ve already made myEasy Hashbrown Casserole . And my The Ultimate Cinnamon Roll Casserole. One month I even made a delicious Lemon Blueberry Bread Pudding

Today I happened to have a jumbo box of Bisquick on hand, which I purchased to make my Bisquick Cinnamon Rolls. (Those turned out great, by the way!) With so much Bisquick on hand, it just made sense to make another casserole using that.

Can I Make a Casserole out of Bisquick?

You can, and you should! I just love the convenience of Bisquick and it works as a foundation for many great recipes.

I found this recipe at Gonna Want Secondsand knew right away it would be perfect. With that much biscuity topping, I knew it would fill tummies. And with sausage, egg, milk, and cheese, I knew it would be delicious!And talk about an easy breakfast recipe!

I will share more of my thoughts about this dish below but let’s dive right in, taking a peek at the ingredients.

  • 1 16-ounce package Jimmy Dean sausage, regular
  • 1/2 cup chopped onion
  • 1/2 cup red bell pepper
  • 3 cups frozen hash brown potatoes
  • 1 bag grated cheddar cheese
  • 1 cup Bisquick
  • 2 cups whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 large eggs

How to Make this Savory Breakfast Casserole

Preheat oven to 400 degrees Fahrenheit.

Spray 9×13-inch baking dish with nonstick cooking spray.

Dice onion and pepper.Saute sausage, onion, and pepper in a large skillet over medium heat, chopping sausage into small pieces as it cooks.

Remove sausage mixture and drain on paper towels, leaving oil in pan.

Put uncooked hash browns into the prepared baking dish and add the cooked sausage and vegetables. Add half of the grated cheese and stir well.

Combine eggs, milk, salt, and pepper in a small bowl, whisking well.

Stir in the Bisquick into the egg mixture and pour it over the other ingredients.There’s no need to stir the Bisquick mixture. It will settle down into the other ingredients as it bakes.

Place in preheated oven.

Bake for 40 minutes or until golden brown. Add the remaining cheese and bake for about five minutes until it is melted.

Remove from the oven and place on wire rack to cool for a few minutes before serving.

Serve and enjoy!

Store leftovers in refrigerator tightly covered in plastic wrap (or in an airtight container). They should stay good up to three days. You can freeze this dish in serving-sized squares, (perfect if you like to meal prep). Be sure to use freezer bags. They will stay good in the freezer up to two months.

Note: You can make this casserole ahead of time and cook it the next morning.

What to Expect from this Savory Casserole

I wasn’t sure what to expect. Mine looked a bit dry on top so I was concerned the whole thing would be dry. Thankfully, I was wrong! The ratio of bread to the other ingredients was just right. (In other words, it didn’t feel “bready.”) Talk about a tasty breakfast!

The flavor of the sausage came shining through, as did the softness of the potatoes. I thoroughly enjoyed this dish, and so did the ladies at our gathering. In fact, there wasn’t a crumb left in the dish when I got ready to leave! I can’t wait to make this one again and again.This easy recipe is sure to be a favorite in your house, too!

Variations on this Easy Breakfast Casserole Recipe

When I do make this delicious casserole again, I might change a few things up. Here are some ideas that come to mind:

Mexican: I think it would be fun to add spicy sausage and some green chiles to this dish. Ole! Top with sour cream and salsa, if you like.Add green bell peppers along with the red, if you like. (Green peppers have a stronger flavor.) You could use sharp cheddar cheese or even pepper jack.

Italian: You can take this dish to a completely different level by adding Italian seasonings and Italian sausage. (Delicious!) If you go this route, choose Mozzarella cheese, or perhaps Parmesan.

Bacon: This is an easy swap. Fry (or bake) a full package of thick bacon and us it in place of sausage. Delicious!

Cheeseburger: Skip the pork sausage and use ground beef, along with cheddar cheese. Talk about a great option! And this would be perfect for lunch or dinner, (and simple to make).

Tater Tot Breakfast Casserole: Skip the hash browns and place tater tots on the bottom of the casserole dish. Then prepare as instructed.
