There is nothing better than Ooey Gooey Queso Fundidio. If it’s on the menu, I will order it! Made with Mexican cheese, potato, poblano peppers, and Mexican spices to wow your tastebuds. Everyone will dig into this crazy delicious queso fundido the second you set it down.

Okay, here it is, my guilty pleasure 😍. We have a local Mexican restaurant t that makes the best queso fundido. My daughter and I are obsessed! She eats it as her meal. It comes served with freshly made warm tortillas and chips. We have ordered it so much I knew this would be something I had to recreate for the kids at home!

And, let me tell you, this is so easy and packed with flavor. Indeed it is the best; chips and dip is a total crowd-pleaser.

There is much I love more than sitting at a Mexican restaurant, preferably in Cabo, sipping a margarita and a little hot iron of bubbling, melty cheese. Dipping your tortilla chip in the stringy hot melted cheese creates the best cheese pull!!

What is Queso Fundido

Queso fundido is like quesos cousin. It translates to molten or melted cheese. Queso fundido combines melted Mexican cheeses with add-ins like poblano peppers and the most popular chorizo. This cheese dish is served with tortillas, chips, and warm tortillas. Who doesn’t love a warm cheese taco?!

I find Oaxaca and mozzarella work best for queso fundido. Oaxaca can be bought in your local Latin market and most mainstream markets. A lot of time, queso fundido is served with chorizo. However, this one is made with poblano papers and some potatoes; it’s my favorite!!

How to make queso fundido with poblano pepper and potato

Making Queso Fundido Is Quite Easy! It Could Be Done In Several Ways: Stove Top, On The Griddle And Scooped Onto A Plate, In The Oven, On The Grill, Or Under The Broiler. Because This Recipe Starts With Sauteing Poblano Peppers And Potatoes, The Cheese Goes Directly Over And Into The Oven For A Few Minutes. It Results In Phenomenal Melted Cheese With Perfect Crisp Bubbles On Top!

  • Preheat the oven to 350 degrees F.
  • Using an oven-safe skillet like a small cast iron, heat to medium-high heat. Add oil, diced peppers, and potatoes. Saute frequently, stirring for 7-8 minutes. Season with seasonings and stir to combine. (please check all ingredients below on the recipe card)
  • Place grated cheese over your potatoes and peppers. Bake for 10 minutes until the cheese is melty and bubbling. Be sure not to overcook the cheese, or the texture will be off.
  • Remove from the oven and serve topped with fresh Pico de Gallo (optional but recommended), tons of tortilla chips, and warm tortillas.

Ingredients

  • 10 ounces Oaxaca cheese, grated
  • 1/3 cup poblano pepper, diced
  • 1/2 cup potato. chopped small
  • 1/4 tsp salt
  • 1 tsp taco seasoning
  • Cilantro for garnish
  • Pico de Gallo for topping (optional)
  • tortilla chips for serving
  • 6 corn or flour tortillas for serving
  • Instructions

    1. Preheat the oven to 350 degrees F.
